16.05.2016 Sophisticated bakery ingredient handling with innovative IBC system

Ing. Johann Daxner, Wels, Austria, recently designed and delivered a flexible, automated blending and dosing system for production of various ready-made bakery formulations comprising a large number of different ingredients such as sugar, a variety of flours, starches, cooking fat, etc. The company paid special attention to ease of cleaning, dustfree powder handling and prevention of cross-contamination. A key criterion was strict separation of ingredients which contain allergens from those which are allergen-free.
 
Another requirement was for reliable provision of up to 12t of ready-mix per hour. In consultation with the customer, Daxner decided on a components hygiene regime in accordance with the COP (cleaning out of place) principle, combined with dry cleaning and CIP (automated wet cleaning in place). The Daxner Container-handling System (DCS) also met the requirement for flexible product and production change-overs. Other important aspects included high mixing accuracy (1:100,000), ergonomic design, prevention of dust accumulation, compliance with hygiene regulations and other statutory conditions. www.daxner-international.com
 
 
Daxner installed a fully automated, three-dimensional IBC-based mixing system as well as mobile intake stations (below) with integral control screens for loading of minor ingredients into day bins
